As we enter fall, we also enter pumpkin deliciousness time! Pumpkin foods are one of my favorites, and I love to incorporate it into my baking creations. Pumpkin and pumpkin seeds are known galactagogues (milk producing substance) so what could be better than a baked treat that boosts milk supply? But these are yummy and make a great snack even if you don't need a galactagogue.
It is so simple to make these delicious pumpkin bars:
1 Stick of butter (melted)
1 egg
1 cup flour
2 cups or more to your liking of granola mix
1 cup brown sugar
1 cup pumpkin puree
Mix it all together. Bake in a greased pan for about 30-40 minutes at 350 degrees. I added a sprinkle of chocolate chips to the top.
That's it!
You can experiment with this recipe and try different ingredients.
- If you want a more cake like consistency- use 2 eggs.
- Do 1/2 cup brown sugar and 1/2 cup coconut sugar to lower glycemic index (and coconut is also another galactagogue)
- Make it gluten free with buckwheat flour or a cup of old fashioned quick oats
- Add a few teaspoons of Pumpkin Pie Spice for more of a pie flavor
