Nap Time Pumpkin Pudding Pie

Bourgeois BabyOne of the things that I think most moms (and dads) are really good at are utilizing their nap time efficiently.  It’s a skill, and one that gets better with time since most little ones tend to nap less as they get older.  So in honor of Thanksgiving and the coming season of eating, I thought I would share a very quick little dessert you can make that does not cut into your precious nap time!  Or, one that takes less than 10 minutes from start to finish, which is less time than some toddler melt downs!  This a great dessert to whip up before you head out the door to any type of get together, or if you have company coming and also have a a huge mess of toys to straighten out.
Here is Pumpkin Pudding Pie:
You will need:
  • Graham cracker pie crust (store bought)
  • Two 4 oz. packages of Pumpkin Spice pudding mix
  • 2 cups milk
  • 1/4 tsp. cinnamon
  • 1 cup pecans
  • 2 tsp. honey
So mix the pudding mix, milk, and cinnamon together. Pour into the pie crust. Throw it into the fridge.
Now mix together the pecans and honey in a small saucepan over medium heat. Stir frequently until evenly coated and heated, typically 5 minutes.  Pour pecans over a piece of wax paper or freezer paper, spread flat, and let sit until cooled.  Then place the honey glazed pecans over the pudding pie.
Viola!
Don’t have pumpkin spice pudding mix? A package of vanilla pudding and 1/2 can of pumpkin filling will do the trick.  You could also use pumpkin pie spice instead of cinnamon.  If you are ambitious, make your own crust.
